Culinary Retreat featuring Wild Game and Nature’s Delicacies


Join us for a journey into the wilds of Idaho for two full days as together we gather fresh northwest specialties and enjoy some of North Idaho's most scenic mountains and rivers. Spend an afternoon learning how to prepare fresh wild game while enjoying fine food and wines at a luxurious high mountain ranch. We will harvest culinary specialties found in the wilderness of North Idaho. Join us on a unique search for edible mushrooms, savory wild rice, delectable huckleberries, and fresh caught native trout!

Day 1:
We’ll start out early this morning fortified with delicious hot coffee and fresh fruit as we board our boat for a scenic ride to meet our hosts. Once we arrive at the ranch, we will be enjoying a hearty breakfast. Our fishing guides will be ready to take you on your pre-selected fishing excursion to fly fish the river for cutthroat or try your hand on the local lake for bass. Later on today we will enjoy a guided hike (or horseback ride) into the nearby mountains to search for wild herbs, nuts, mushrooms, and berries that are currently in season. These mountains are full of diverse flora and fauna, being prime habitat for moose, deer, elk, and majestic bald eagles. Be sure to have your camera ready because you never know what will be around the next bend. We are going to be crossing beautiful streams and viewing waterfalls since water flows from every direction down these mountains. Our guide will be instructing us on the prime habitat for mushrooms as well as educating us on the differences between edible and inedible mushrooms. Great huckleberry locations are closely guarded secrets in these mountains, so you will want to pay close attention to our experts as they guide you to their favorite spots. We may get opportunities to spot bears too since huckleberries are one of their favorite foods.This evening, be prepared for a true western experience with a ranch bar-b-que and an evening spent around a roaring campfire. We will be entertained with colorful stories of the wild, wild past of this historic mining and logging region.
Day 2 :
This morning we will be learning to gather wild rice as it grows in the marshy fields. We will be taken by airboat into the fields where you will be shown how to gather the stalks to add to our bounty. This area is famous for its wild rice and what is grown here is exported all over the world. Our guide will be pointing out the many species of waterfowl that also live in these marshes, so be on the lookout for ducks, geese, osprey, and bald eagles. Lunch today will be prepared by you with the help of our local chef. There will be great recipes and tips on preparing fish, wild game, mushrooms, huckleberries, and anything else that we harvest in season. After a sumptuous lunch served with fine local wines, we will have some time to relax before we leave this little slice of heaven. Our boat will be waiting to deliver us back to Coeur d’Alene, arriving very late this afternoon.
